Phase 2 of The House Behind The Trees ~ The downstairs #TeelsBuildaHouse

So we are starting the downstairs ... I HATE to say basement because we had a basement in our old home, where you opened a door and went down stairs separated from anything else. It was a finished basement complete with a bedroom, craft room, family/game room and we spent a lot of time there ~ our oldest son moved down there in jr high and stayed through high school ... until we finished the master suite in the attic then he moved back up to the bedroom floor with his brother and sister.  So here our downstairs is open to the rest of the house, you can see through to the outside from the top of the stairs going down because we have a wall of windows down there as well.  We really didn't plan to have a kiddo down there but since we are having to do a switch-a-roo with rooms (I'll explain later) he is moving home soon and will be downstairs. Anyhoo, our downstairs will house our main family room, our middle sons room, a full bath and kitchenette.  I thought it would be fun ...

We're back at school and Fall is approaching so try these Fast-Fix weeknight hearty dinners.

I found these recipes while looking for some new ideas for Fall dinners. Anything that claims "If you've got 30 minutes, you've got time for dinner when you take advantage of these quick and hearty weeknight meals." then I want to try it! Just thought I would pass a few of them along....remember I teach FACS ~ otherwise known as Home Ec, so this is what I LOVE doing =)

Mini Meat Loaves with Green Beans
Ingredients:
1 egg, lightly beaten
1 cup purchased pasta sauce
1/2 cup fine dry bread crumbs
1/4 cup fresh basil leaves, coarsely chopped if large
1/4 teaspoon salt
1 pound lean ground beef
1 cup shredded mozzarella cheese (4 ounces)
1 ounce fresh green beans, trimmed
1 tablespoon olive oil
Directions:
Preheat oven to 450 degrees F. In a medium saucepan bring lightly salted water to boiling. In a large bowl combine egg, 1/2 cup of the pasta sauce, bread crumbs, 2 tablespoons of the basil, and salt. Add beef and 1/2 cup of the cheese; mix well. Divide beef mixture into four equal portions. Shape each portion into a 5-1/2x2-inch oval loaf. Place loaves onto a 15x10x1-inch baking pan. Spoon on remaining pasta sauce and sprinkle with remaining cheese. Bake 15 minutes or until internal temperature registers 160 degrees F. Meanwhile, cook green beans in boiling salted water for 10 minutes. Drain; toss with oil and, if desired, crushed red pepper. Serve with meat loaves. Sprinkle all with remaining basil leaves.

Barbecue Quesadillas
Ingredients:
Nonstick cooking spray
4 7 - 8 inches flour tortillas
1 cup shredded extra-sharp cheddar cheese or Mexican cheese blend (4 ounces)
1 4 ounce can diced green chiles, drained
1 18 ounce tub refrigerated barbecue sauce with shredded chicken (2 cups)
1 cup bottled salsa
1/4 cup dairy sour cream
1/4 cup sliced green onion (2)
Directions:
Coat one side of each tortilla with cooking spray. Place, coated sides down, on cutting board or waxed paper. Sprinkle 1/4 cup of the cheese over half of each tortilla. Top with green chiles and barbecue sauce with chicken. Fold tortillas in half, pressing gently. Preheat oven to 350. In a hot 10-inch skillet cook quesadillas, two at a time, over medium heat for 6 to 8 minutes or until golden brown, turning once. Place quesadillas on a baking sheet. Keep warm in preheated oven for up to 30 minutes. Repeat with remaining quesadillas. Cut each quesadilla into 3 wedges. Serve with salsa, sour cream, and green onion. Makes 4 servings.

Broccoli-Potato Soup
Ingredients:
2 medium red potatoes, chopped
1 14 1/2 ounce can reduced-sodium chicken broth
3 cups small broccoli florets
2 cups milk
3 tablespoons all-purpose flour
2 cups smoked Gouda cheese, shredded (8 ounces)
Ground black pepper
Shredded Cheese
Directions:
In large saucepan combine potatoes and broth. Bring to boiling; reduce heat. Simmer, covered, for 8 minutes. Mash slightly. Add broccoli and milk; bring just to simmering. In a medium bowl toss flour with the 2 cups cheese; gradually add to soup, stirring cheese until melted. Season to taste with pepper. Ladle soup into shallow serving bowls. Top with additional cheese.


Garlic-Parmesan Chicken & Noodles
Ingredients:
6 ounces extra-wide egg noodles
1 2 - 2 1/4 pound purchased roasted chicken
1 cup frozen peas
4 cloves garlic, minced, or 2 teaspoons bottled minced garlic
1 3/4 cups whole milk or light cream
1/2 slice white or wheat bread
3/4 cup shredded Parmesan cheese
2 tablespoons butter, melted
Directions:
Preheat oven to 450 degrees F. In a Dutch oven bring 6 cups salted water to boiling; add noodles. Cook for 10 minutes or until tender; drain. Meanwhile, remove chicken from bones. Discard skin and bones; shred chicken. In a saucepan combine chicken, peas, garlic, and whole milk; heat through. Cover and keep warm. In a blender or food processor, process bread into coarse crumbs with several on/off turns. Transfer to a small bowl; add 1/4 cup of the Parmesan cheese and melted butter. Stir noodles and remaining Parmesan cheese into hot chicken mixture. Heat and stir until bubbly. Divide among four individual casserole dishes. Top each with some of the bread crumb mixture. Bake for 5 minutes or until top begins to brown.

Quick Green Chili and Chicken Enchiladas
Ingredients:
1 1/4 pounds chicken breast tenders
1 1/2 cups bottled green salsa
1 4 ounce can diced green chiles
1 1/2 cups shredded Mexican-style four-cheese blend (6 oz.)
8 6 - 7 inches flour tortillas
Refrigerated fresh salsa (optional)
Lime wedges (optional)
Directions:
Preheat broiler. Cut chicken into 1-inch pieces. In large microwave-safe bowl microcook on HIGH 7 minutes or until no pink remains, stirring twice. Drain liquid. Break up chicken slightly in bowl with back of wooden spoon. Add salsa and chiles. Cook 3 minutes more or until heated through, stirring once. Stir in 1 cup of the cheese. Spoon chicken mixture evenly down center of tortillas. Roll tortillas around filling and place in 13x9x2-inch baking pan. Sprinkle remaining cheese over enchiladas. Broil 3 to 4 inches from heat 1 to 2 minutes or until cheese is melted. To serve, top with salsa and pass lime wedges. Makes 4 servings.

Curried Vegetable Soup
Ingredients:
3 cups cauliflower florets
1 14 ounce can unsweetened coconut milk
1 14 ounce can vegetable or chicken broth
1 tablespoon curry powder
1/4 cup chopped fresh cilantro
2 cups frozen baby peas-vegetable blend
2 pita bread rounds, cut into wedges (optional)
1 tablespoon olive oil (optional)
Fresh cilantro sprigs and crushed red pepper (optional)
Directions:
Heat broiler. In Dutch oven combine cauliflower, coconut milk, broth, curry powder, and the 1/4 cup cilantro. Bring to boiling over high heat. Reduce heat to medium-low. Simmer, covered, 10 minutes or until cauliflower is tender. Stir in frozen vegetable blend. Cook, uncovered, until heated through. Season with 1/4 teaspoon salt. Meanwhile, place pita wedges on baking sheet. Brush both sides with oil. Sprinkle with 1/4 teaspoon curry powder. Broil 3 to 4 inches from heat for 4 minutes, turning once, until golden. Serve soup with pita wedges. Sprinkle with cilantro and red pepper. Makes 4 servings.
